Production process

Vinification

"Alcoholic fermentation and maceration in temperature-controlled cement vats for about 20-25 days. Malolactic fermentation in French oak barriques (50% new)."

Ageing

Barrique for about 12-14 months, 70% new and 30% second passage

Bottle ageing

6-8 months

Tasting Notes

Intense ruby red colour tending towards violet. Notes of blueberry and aromatic herbs on the nose. Elegant and silky tannins.

Pairing

Ideal with medium-aged cheeses, meat stews, as well as an unusual but intriguing combination with dark chocolate.
